Goat Cheese Stuffed Burgers

Not to rub it in northern friends, but it's been in the high 70s here in beautiful Charleston for the past few days. This weather really makes me want to grill and drink Firefly Vodka . To make up for the fatty burger, I had Firefly and Water- very skinny girl of me.

What you'll need:
2lbs Groud Beef 80/20
1 Small Log of Goat Cheese
1 Medium Sweet Onion
1 Green Bell Pepper
1 Red Bell Pepper
Olive Oil
Garlic
Balsamic Vinegar
Worchester Sauce
Salt
Pepper

First, combine ground beef, 1 tablespoon salt, 1 tablespoon pepper, 4 dashes Worchester Sauce. Cut down into 4 evenly sized patties. Make sure to flatten and round edges. Next, cut about a half of an inch off of the goat cheese log and place in the center of one patty. Next take the other patty and put on top and flatten edge so the cheese is trapped in the middle. Repeat. Let sit until toppings are ready and grill to your liking.

Next in a medium saute pan take 1 tablespoon olive oil, 1 clove minced garlice and heat on medium. In the meantime remove the seeds from peppers and cut into strips. Once oil is warm add strips to saute pan. Cook for about 15 minutes or until peppers are golden brown and soft.



In a separate saute pan you'll slice and place your onions with a dash of olive oil. Add in 1/4 cup of balsamic vinegar to medium heat and let simmer until onions are soft and brown in color and balsamic is reduced.



Cook burgers on grill to your liking then add on both toppings. Enjoy!
