Wednesday Night Dinners

When Justin and I lived in Philadelphia, we always made it a point to get together with our neighbors, Brian & Michelle every Thursday night for dinner and Grey's Anatomy. I miss that part about Philly SO MUCH. We've recently moved into a new neighborhood and have the most fabulous neighbors, Tim & Sarah. Since my weeks are pretty insane with events lately, we've decided to do Wednesday night dinners instead of Thursday  due to my hectic schedule.

Last night was our first and we hosted! Jambalaya it was.. and AMAZING! It's by far one of the easiest recipes I've ever tried, just stick it all in the crock pot and let it cook all day. SIMPLE and a huge crowd pleaser.

Ingredients:
3 boneless skinless chicken breasts, diced into squares
3 links Andoullie sausage, diced
1 28oz can diced tomatoes
1 medium onion, chopped
1 red bell pepper, chopped
1 cup reduced sodium chicken broth
1 teaspoon dried oregano
1 teaspoon basil
2 teaspoons Cajun seasoning
1 teaspoon hot sauce
2 bay leaves
1/2 teaspoon dried thyme
1 lb fresh shrimp
2 cups cooked brown rice

In a slow cooker combine, all ingredients except for shrimp and brown rice. It will look really runny like this:



Cover and cook on low for 7 hours on low. Then add in shrimp and brown rice and let cook for an additional 15 minutes and it will thicken liken.
