Red Velvet Love Cake

After many requests, I've decided to unleash the Red Velvet Love Cake. This recipe is adapted from the Italian Love Cake recipe that was passed along in my family- personally, I think it's better with the changes I made and of coarse, much more Southern!

What you'll need:
1 Box Red Velvet Cake Mix + ingredient needs on box
1lb Ricotta Cheese {Whole Milk}
3 Eggs
3/4 Cup Sugar
1 Small Box Instant Vanilla Pudding
1 Cup Milk
8 oz. Container Cool Whip

First, use cake mike as directed from box and pour into a 9x13 floured and greased pan.

In a separate bowl, mix the following:

1lb Ricotta Cheese
3/4 Cup Sugar
3 Eggs

Pour this mixture directly on top of the cake, do not spread over cake but try to pour evenly. Bake at 350 for 30-35 minutes.

When cake is completely cool, but together topping and refrigerate until ready to use.

To Make Topping:
Empty 1 box instant Vanilla pudding, 1 cup milk. Whisk together. Fold in 8oz. softened Cool Whip.

Enjoy, this is super easy and always a crowd pleaser! To switch it up you can use the following:

Instead of Red Velvet Cake Mix.... use Strawberry or Marble
Instead of Vanilla Instant Pudding... use Cheesecake or Chocolate Instant Pudding
